Nutella-Stuffed Mini Bundt Cakes


Last night, I found a mini bundt cake maker (still in its box) hidden away in a cupboard. I think I bought it last year along with the mini heart shaped waffle maker and then forgot about it. Just add it to the list of things TikTok made me buy.


So today, I thought it would be fun to make mini bundt cakes and stuff them with Nutella. Sounds easy, right? Wrong!!!


My first mistake was not checking to see if I had all the ingredients. I found four jars of Nutella but no flour. Not a problem, we’ll just change it up a bit. I found a great recipe at preethicuisine.com that uses pancake mix as the main ingredient.


My second mistake was I should have opened the box first. In my head, I thought it would just be a smaller version of an average sized bundt cake. Nope! Instead, I found myself staring at three itsy, bitsy cake molds for the batter. I would say they’re comparable to the size of a mini donut. Hmmm, okay, once again, no problem. We’ll just cut the original recipe’s measurements in half.


And my third mistake was what I did with the Nutella. Because the cakes were so unexpectedly tiny, my original plan wouldn’t work. A simple solution would be to serve the Nutella on the side. But no, that’s too easy!!! Instead, my brain decided to inject each individual mini bundt cake with Nutella because I had nothing else to do today.


Unfortunately, because I was eating the mini bundt cakes at the same time I was making them, I don’t know exactly how many the recipe actual makes, but it does make a lot. Also, I can’t give you a total prep and cook time because I wasn’t paying attention, but I can tell you, I was in the kitchen for a long time.


So, looking back, would I have changed some things? Umm…hell yeah! But do I regret it? Umm…no!!! Now, please excuse me while I go and finish off the remaining mini cakes.

Ingredients:

  • 1 ¼ cups of pancake mix

  • ¼ cup plus 2 tbsp. of brown sugar

  • ½ tsp. vanilla extract

  • 2 tbsp. melted butter

  • ¾ cup milk

  • Nutella

  • Powdered sugar


Instructions:

  1. Preheat the bundt cake maker (my brand is the Nostalgia MyMini Lava & Bundt Cake Maker) and lightly coat with oil.

  2. Add pancake mix, brown sugar, vanilla extract, melted butter and milk in a medium sized bowl and mix well.

  3. Pour batter into the cake maker and cook 2-3 minutes.

  4. Remove carefully and place onto cooling rack.

  5. Fill a culinary syringe with Nutella and inject into each mini bundt cake.

  6. Dust powdered sugar onto the cakes with a sifter and serve warm.
